Farklı sıcaklık ve depolama sürelerinin aynalı sazan (Cyprinus carpio L.) filetolarındaki nitrit ve nitrat düzeyleri üzerine etkileri
Bu çalışma, derili, derişiz ve kızartılmış olarak vakumlanan toplam 222 aynalı sazan (Cyprinus carpio L.) filetolarındaki nitrit ve nitrat düzeylerinde muhafaza süresi içinde meydana gelebilecek değişiklikleri belirlemek amacıyla yapıldı. Vakumlanarak -18 °C'de muhafaza edilen derili ve derişiz filetolarda sırasıyla 0.50 - 2.10 ppm , 0.50 - 2.80 ppm nitrit; 12.20 - 10.21 ppm, 12.56 - 10.28 nitrat saptandı. Vakumlanıp + 4 °C'de muhafaza edilen kızartılmış filetolarda 0.70 - 3.50 ppm nitrit, 12.36 -10.16 ppm nitrat tespit edildi. İstatistiksel olarak derili, derişiz ve kızartılmış filetolardaki nitrit ve nitrat düzeyleri bakımından her grup içinde dönemler arasında ve derili ile derişiz örnekler arasında 1., 8. ve 12. aylarda nitrit; 7. ve 8. aylarda nitrat düzeyleri bakımından önemli bir farklılık bulundu (p< 0.05). Sonuç olarak -18 °C'de 12 ay muhafaza edilen derili ve derisiz filetolar ile + 4 °C'de 120 gün muhafaza edilen kızartılmış filetolann nitrit ve nitrat miktarları bakımından sağlık açısından risk oluşturmayacağı kanaatine varıldı.
The effects of various time and temperatures on nitrite and nitrate levels of mirror carp (Cyprinus carpio L.) fillets
The aim of this study was to determine the variations on nitrit, nitrat levels of 222 vacuumed with skin, skinless and fried Mirror carp (Cyprinus carpio L.) fillets during storage period. Fillets with or without skin were vacuumed and stored at -18°C. The levels of nitrit and nitrat in the samples were between 0.50-2.10 ppm, 0.50-2.80 ppm; 12.20-10.21 ppm, 12.56-10.28 ppm, respectively. In vacuumed fined fillets which were stored at 4°C, the values were between 0.70-3.50 ppm and 12.36-10.16 ppm, respectively. The differences in nitrite and nitrate levels of all sample groups which were examined at various time points of storage were statistically significant. However, except in several instances, differences between fillets with and without skin at any given time point were not significant for nitrite and nitrate levels. In nitrite levels, significant differences were noticed on ist, gth and 12* month between fillets with and without skin. For nitrate levels, significant difference was noticed on 7th and 8th months. In conclusion, it appear that with regard to nitrate and nitrite levels, fillet samples examined in this study do not pose a health risk for consumers,
